My most recent work with Cowch Group:

Conceived in 2011, Cowch was created to be a vibrant, safe and inclusive destination. With four Dessert Cocktail Bars and a Production Facility, we generated over $6 million in revenue and welcomed over 186,000 customers into the venues in 2022. In that year we had a workforce of approx. 25 full timers and 75 casuals. With the Production arm of the business saw products being sold to over 40 independent grocers and café/restaurants.

Our achievements:

- Developed the Cowch brand into a business with a strong reputation and market share in the Southeast Queensland hospitality scene. This includes brand assets, store design, menu creation and a customer database of 39,000 people.

- Created a one best way operating system for the restaurant business, which streamlined onboarding, training, and operational processes. This enabled us to seamlessly scale the business

- Created an innovative new system that improved overall efficiency, by integrating and streamlining receivables, warehouse management, recipe formulation, batch coding, label printing and dispatch for the Production business

- Established Cowch as a preferred place to work, enabling the business to develop relationships with schools and colleges to include the business in their hospitality training and certification programs and curriculum

- Developed and constantly evolved the selling principles across the restaurant business to increase average spend per transaction and then in time with reducing margins due to higher costs, looked at methodologies on how to maintain the businesses original margins.

- Opened locations at South Bank 2014, Pacific Fair in 2016 and then Chermside in 2019

- Developed and executed several viral marketing initiatives, which included the first Easter Bunny shake, Disney’s Frozen collaboration, Nutella exclusive menu.

- Developed and launched a franchise program with the first franchisee signing in 2021 at Garden City

- Opened a Production facility in 2021, which made approx. 80% of all desserts consumed within the Cowch retail stores. This contributed $800,000 to the Group, within its first financial year.

- Developed relationships and negotiated key accounts with Cadbury, Bidfood, Disney, Drakes, Harris Farm, IGA, Carlton United Breweries, Department of Agriculture and Fisheries, Trade Invest Queensland, Queensland Treasury Corporation, Brisbane Economic Development Agency, Judo Bank

- Lead the diversification of revenue streams by launching products into foodservice (Bidfood and MOCO) and retail (IGA, Harris Farm, Drakes). This increased the Production Kitchen’s revenue by 110%

- Lead research and development projects, which included grant applications, liaising with key government and private stakeholders such as Department of Agriculture and Fisheries, CSIRO, University of Queensland, Food Innovation Australia and Cooperative Research Centres and development of intellectual property that could be commercialised for future revenue
